The end of the school year is almost here! As a teacher myself, I know how much hard work goes into each school year, especially as a preschool teacher. My little ones come in knowing a few letters and by the end of the year I have taught them all letter, letter sounds, rhyming and they are even writing! Having being able to witness all these amazing milestones almost makes up for the fact that we don’t get a summer break 🙂
Although we don’t get a break in the summer from school, we do get to have some great summer camp activities and fun coming up. All of our final assessments have been finished and parent – teacher conferences have come to a close which means it’s time to celebrate! I thought it would be a perfect to have an end of the year fiesta featuring some delicious recipes using the all new Bush’s Hummus Made Easy kits!
Now before I mention the two easy and mouthwatering recipes I made for our fiesta, I need to tell you a little more about these new Bush’s Hummus Made Easy products.
The Bush’s Hummus Made Easy packets come in 3 flavors- Classic, Southwest Black Bean and Roasted Red Pepper. The packets are bought along with a can of either garbanzo beans or black beans, depending on the flavor you choose. Next, all you simply do is take the packet and the can of beans and blend them using a blender or food processor to the consistency you prefer. BOOM! Easy, simple hummus that tastes great- even on its own!
So for our end of the year fiesta I had to make some delicious foods! Since the foods would need to be finger foods or foods that would be enough servings for 15-20 employees, I thought single serving 5 Layer Fiesta dip would be perfect! The main ingredient was definitely the Southwest Black Bean Hummus.
Now, this hummus could be the star of the show all on its own- it’s THAT good! If they had this as an appetizer at a restaurant, I would definitely order it. The zesty mix paired with the black beans were amazing! However, to make this fiesta a real party, I knew I needed to make it look pretty so I bought a few single serve cups and used the Southwest Black Bean hummus as the foundation of the dip. Layered next were the guacamole, sour cream, salsa, cheese and a few chives for color. It was heaven! I’m not going to lie- I may have had 3-4 cups that day!
To pair along with the dip and chips I used the Roasted Red Pepper Hummus to make some Roasted Red Pepper Pinwheels. First, layer the hummus on a flour tortilla. Add Colby cheese, turkey, ham, Mrs. Dash southwest chipotle seasoning and a few slices of roasted bell pepper in the middle. Roll up tightly and pin together with tooth picks. Slice them up and get ready to pig out!
